Ingredients

  • 4 pieces Flour tortillas (large)
  • 2 pieces Chicken breast (boneless, skinless)
  • 2 tablespoons Olive oil
  • 2 tablespoons Taco seasoning
  • 2 cups Cooked white or brown rice
  • 1 cup Black beans (cooked or canned, rinsed and drained)
  • 1 cup Shredded cheddar cheese
  • 1 cup Sour cream
  • 1 cup Guacamole
  • 2 cups Romaine lettuce (shredded)
  • 2 medium Tomatoes (diced)
  • 1 bunch Cilantro (chopped)
  • 1 cup Salsa (mild, medium, or hot, based on preference)
  • 1 piece Jalapeño (optional, sliced for garnish)

Directions

Step 1

Preheat a large skillet over medium heat.

Step 2

Cut the chicken breast into small bite-sized pieces. Season with 2 tablespoons of taco seasoning.

Step 3

Add 2 tablespoons of olive oil to the preheated skillet and cook the chicken until golden brown and fully cooked (approximately 6-8 minutes). Remove from heat and set aside.

Step 4

Prepare the cooked rice by mixing it with a pinch of salt and some chopped cilantro for added flavor.

Step 5

Warm the flour tortillas in the microwave for 15-20 seconds or in a clean skillet for about 10 seconds on each side to make them pliable.

Step 6

Assemble the burritos: Lay one tortilla flat and start by spreading 1/4 cup of sour cream in the center. Top with 1/2 cup of rice, 1/4 cup of beans, a few pieces of cooked chicken, shredded lettuce, diced tomatoes, a generous sprinkling of shredded cheddar cheese, and approximately 2 tablespoons each of guacamole and salsa. Garnish with jalapeño slices if desired.

Step 7

Carefully fold in the sides of the tortilla and roll it tightly from the bottom to form a burrito. Repeat for the remaining tortillas.

Step 8

Optional: Heat a clean skillet over medium heat and lightly toast each burrito for 1-2 minutes on each side to give it a golden, crispy finish.

Step 9

Serve warm with additional salsa, guacamole, or sour cream on the side. Enjoy your Burrito Ultimo!
