Ingredients

  • 1 pound ground beef
  • 1 medium, diced onion
  • 2 large, sliced into rounds carrots
  • 2 medium, sliced celery stalks
  • 2 medium, diced potatoes
  • 1 cup frozen green beans
  • 1 cup frozen corn kernels
  • 28 ounces canned diced tomatoes
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 3 minced garlic cloves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 1 tablespoon olive oil

Directions

Step 1

In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles with a spatula. Drain any excess fat and transfer the beef to the crock pot.

Step 2

In the same skillet, add the diced onion and minced garlic. Sauté for 2–3 minutes until fragrant, then transfer to the crock pot.

Step 3

To the crock pot, add the carrots, celery, potatoes, frozen green beans, frozen corn, and canned diced tomatoes (with their juices).

Step 4

Pour in the beef broth and stir in the tomato paste, Worcestershire sauce, thyme, oregano, salt, and black pepper.

Step 5

Mix everything well to combine, ensuring all ingredients are evenly distributed in the crock pot.

Step 6

Cover the crock pot with its lid and set to cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the vegetables are tender.

Step 7

Taste and adjust seasoning if necessary. Ladle the soup into bowls and serve hot with crusty bread or crackers on the side.
