Ingredients

  • 1.5 pounds ground beef (80% lean, 20% fat)
  • 0.5 pounds ground pork
  • 0.5 cups yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoons black pepper, freshly ground
  • 6 slices cheddar cheese slices
  • 6 pieces hamburger buns
  • 3 tablespoons butter, softened
  • 0.5 cups dill pickles, sliced
  • 6 pieces lettuce leaves
  • 1 large tomato, sliced
  • 2 tablespoons mustard
  • 2 tablespoons ketchup

Directions

Step 1

In a large mixing bowl, combine the ground beef, ground pork, diced onion, minced garlic, Worcestershire sauce, smoked paprika, chili powder, salt, and black pepper. Mix gently with your hands until all ingredients are well incorporated, being careful not to overwork the meat.

Step 2

Divide the meat mixture into 6 equal portions and shape them into burger patties about ¾-inch thick. Press a shallow indentation into the center of each patty with your thumb to prevent doming while cooking.

Step 3

Preheat a grill or stovetop skillet over medium-high heat. Lightly oil the grill grates or skillet surface to prevent sticking.

Step 4

Cook the burger patties for 4-5 minutes on each side for medium doneness, or until they reach your desired level of doneness. In the last minute of cooking, place a slice of cheddar cheese on top of each patty to melt.

Step 5

While the burgers are cooking, lightly butter the cut sides of the hamburger buns and toast them on the grill or in a separate skillet until golden brown, about 1-2 minutes.

Step 6

Assemble the burgers: Spread ketchup and mustard on the bottom half of each bun. Layer with a lettuce leaf, a slice of tomato, a cooked burger patty with melted cheese, and a few dill pickle slices. Top with the bun lid.

Step 7

Serve the Bunkhouse Burgers immediately with your favorite side dishes, like fries or coleslaw. Enjoy!
