Ingredients

  • 3 lbs buffalo roast (preferably chuck or sirloin)

  • 1 tsp dried rosemary
  • 1 whole garlic bulb
  • 2 pieces chipotle peppers in adobo sauce
  • 2 cups beef stock
  • 2 tbsp unsalted butter
  • 1 tbsp honey
  • 0.5 cup red wine (optional)

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

Rub the buffalo roast all over with 1 tablespoon of olive oil, kosher salt, black pepper, dried thyme, and dried rosemary. Let it sit at room temperature for 15 minutes.

Step 3

Slice the top off the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap it in foil, and place it in the oven to roast for 40 minutes while preparing the roast.

Step 4

Heat a large oven-safe skillet or Dutch oven over medium-high heat. Sear the buffalo roast on all sides until well browned, about 5-6 minutes per side. Remove the roast and set aside.
