Ingredients

  • 12 oz Penne pasta
  • 2 large Chicken breasts
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 cup Buffalo wing sauce
  • 8 oz Cream cheese
  • 1 cup Heavy cream
  • 1 cup Shredded cheddar cheese
  • 2 stalks Green onions
  • 2 tbsp Parsley (optional, for garnish)

Directions

Step 1

Fill a large pot with water, add a pinch of salt, and bring to a boil. Cook the penne pasta according to the package instructions for al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

While the pasta cooks, season both sides of the chicken breasts with salt, black pepper, and garlic powder.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for 4-5 minutes per side, or until fully cooked. Remove the chicken from the skillet and set aside to rest for a few minutes before slicing into thin strips.

Step 4

Lower the heat to medium-low and add the buffalo wing sauce and cream cheese to the skillet used for cooking the chicken. Stir until the cream cheese is fully melted and the sauce is smooth.

Step 5

Pour in the heavy cream and stir to combine. Gradually add the shredded cheddar cheese, stirring until melted and incorporated into the creamy sauce.

Step 6

Add the cooked pasta to the skillet and toss to coat it evenly in the buffalo cheese sauce. If the sauce is too thick, add a bit of the reserved pasta water, a tablespoon at a time, until the desired consistency is reached.

Step 7

Gently fold in the sliced chicken and cook together for 2-3 minutes until everything is heated through.

Step 8

Serve the Buffalo Chicken Pasta in bowls, garnished with chopped green onions and fresh parsley, if desired. Enjoy warm!
