Ingredients

  • 250 grams Ricotta cheese
  • 250 grams Cream cheese, softened
  • 150 grams Granulated sugar
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Fresh lemon zest
  • 240 milliliters Heavy cream
  • 15 grams Cornstarch
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 160°C (320°F).

Step 2

In a large mixing bowl, combine the ricotta cheese and cream cheese. Beat them together using an electric mixer or hand whisk until smooth and creamy.

Step 3

Add the granulated sugar to the cheese mixture and mix until fully incorporated.

Step 4

Crack the eggs into the bowl one at a time, mixing well after each addition to ensure they are fully combined.

Step 5

Stir in the vanilla extract, fresh lemon zest, and a pinch of salt.

Step 6

In a separate small bowl, combine the heavy cream and cornstarch. Whisk until smooth, then gradually add the mixture to the custard, stirring until fully incorporated.

Step 7

Divide the mixture evenly among six ramekins or oven-safe dessert cups.

Step 8

Place the ramekins in a large, deep baking dish. Carefully pour boiling water into the baking dish to create a water bath, filling it halfway up the sides of the ramekins.

Step 9

Cover the baking dish loosely with aluminum foil, leaving some space for steam to escape.

Step 10

Bake in the preheated oven for 45-50 minutes, or until the custard is set but still slightly jiggly in the center.

Step 11

Carefully remove the ramekins from the water bath using tongs or an oven mitt and let them cool to room temperature.

Step 12

Refrigerate the custards for at least 2 hours or overnight for the best texture and flavor.

Step 13

Serve chilled, optionally garnished with fresh berries or a dusting of powdered sugar.
