Preheat your oven to 375°F (190°C).
Boil the lasagna noodles in a large pot of salted water according to package instructions. Drain and set on a clean kitchen towel to cool slightly.
In a large skillet, heat olive oil over medium heat. Add the sausage and ground beef, breaking up with a spoon until browned and fully cooked. Remove from the skillet and set aside.
In the same skillet, add the chopped onion. Cook until softened, about 4 minutes. Stir in the garlic and tomato paste, cooking for an additional 1-2 minutes.
Add the crushed tomatoes, tomato sauce, dried basil, dried oregano, salt, pepper, and sugar to the skillet. Stir to combine and simmer the sauce for 15-20 minutes.
In a mixing bowl, combine the ricotta cheese, eggs, parsley, and Parmesan until smooth. Set aside.
To assemble, spread a thin layer of tomato sauce at the bottom of a 9x13-inch baking dish. Lay 3-4 lasagna noodles on top.
Spread a layer of the ricotta mixture over the noodles, followed by the cooked sausage-beef mixture, a generous sprinkle of mozzarella, and another layer of sauce. Repeat the layers until ingredients are used, ending with sauce and mozzarella on top.
Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and continue baking for another 15 minutes, until the cheese is bubbly and golden.
