Ingredients

  • 200 grams Khoya (mawa)
  • 2 tablespoons Plain flour (maida)
  • 2 tablespoons Milk
  • 1 teaspoon Green cardamom powder
  • 2 tablespoons Chopped almonds
  • 2 tablespoons Chopped pistachios
  • 1 tablespoon Golden raisins
  • 500 milliliters Refined oil or ghee (for frying)
  • 200 grams Sugar
  • 250 milliliters Water
  • 5 strands Saffron strands
  • 1 teaspoon Rose water

Directions

Step 1

Grate the khoya into a large mixing bowl to ensure no lumps remain.

Step 2

Add the plain flour, milk, and green cardamom powder. Mix thoroughly until a smooth, pliable dough forms.

Step 3

Incorporate the chopped almonds, pistachios, and golden raisins into the dough, ensuring an even distribution of nuts and dried fruits.

Step 4

Divide the dough into small marble-sized balls, ensuring they are smooth and crack-free for even frying.

Step 5

Heat the refined oil or ghee in a deep frying pan over medium heat. Once hot, reduce to a low flame.

Step 6

Gently fry the dough balls in batches, stirring frequently, until they turn a golden-brown color. Remove the fried jewels and place them on paper towels to drain excess oil.

Step 7

Meanwhile, prepare the sugar syrup by combining the sugar and water in a saucepan. Heat gently and stir until the sugar dissolves entirely.

Step 8

Add the saffron strands and rose water to the syrup. Simmer for 5 minutes, then turn off the heat.

Step 9

Immerse the fried jewels in the warm sugar syrup and let them soak for at least 15 minutes to absorb the flavors.

Step 10

Serve warm or at room temperature, garnished with extra nuts or saffron strands for decoration.
