Ingredients

  • 2 cups Basmati rice
  • 3 cups Water
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, finely diced
  • 3 cloves Garlic cloves, minced
  • 0.5 cup Fresh parsley, finely chopped
  • 0.25 cup Fresh dill, finely chopped
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 2 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Lemon juice
  • 0.25 cup Toasted almond slivers (optional)
  • 0.25 cup Raisins (optional)

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for 20 minutes, then drain.

Step 2

In a medium pot, bring the 3 cups of water to a boil. Add 1 teaspoon of the salt and the drained rice. Reduce the heat to low, cover, and cook for about 15 minutes or until the rice is tender and the water is fully absorbed. Remove from the heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.

Step 3

While the rice is cooking, heat the butter and olive oil in a large skillet over medium heat. Add the diced onion and sauté for 5-6 minutes until softened and golden.

Step 4

Add the minced garlic, ground cumin, and turmeric to the skillet. Cook for another 1 minute to release the aromas of the spices.

Step 5

Stir in the cooked rice, mixing thoroughly to coat the grains with the butter, oil, and spices.

Step 6

Add the chopped parsley, dill, remaining salt, and black pepper. Stir well to evenly distribute the herbs throughout the rice.

Step 7

Drizzle the lemon juice over the rice and gently toss to combine.

Step 8

If using, mix in the toasted almond slivers and raisins for added texture and flavor.

Step 9

Transfer the rice to a serving dish and serve warm. Garnish optionally with additional fresh parsley or dill.
