  • 3 large Eggs
  • 80 milliliters Honey
  • 120 milliliters Milk (dairy or plant-based)
  • 60 milliliters Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 50 grams Dried apricots (chopped)
  • 50 grams Raisins
  • 50 grams Walnuts (chopped)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large bowl, whisk together the buckwheat flour, almond flour, baking powder, cinnamon, and salt until well combined.

Step 3

In a separate bowl, beat the eggs lightly. Stir in the honey, milk, melted coconut oil, and vanilla extract until smooth.

Step 4

Slowly pour the wet ingredients into the bowl with the dry ingredients and mix until a thick, smooth batter forms.
