Ingredients

  • 1.5 cups Creamy peanut butter
  • 0.5 cups Unsalted butter, softened
  • 1 teaspoon Vanilla extract
  • 3.5 cups Powdered sugar
  • 2 cups Semisweet chocolate chips
  • 2 tablespoons Shortening or coconut oil

Directions

Step 1

In a large mixing bowl, combine the peanut butter, softened butter, and vanilla extract. Stir until smooth and well combined.

Step 2

Gradually add the powdered sugar, about 1 cup at a time, mixing thoroughly after each addition. The mixture should become thick and hold its shape like a firm dough.

Step 3

Roll the peanut butter mixture into small balls, about 1 inch in diameter. Place the balls onto a baking sheet lined with parchment paper.

Step 4

Insert a toothpick into the center of each ball to make dipping easier, then place the baking sheet in the freezer for 20 minutes to firm up.

Step 5

Meanwhile, melt the chocolate chips and shortening (or coconut oil) together in a heatproof bowl over a pot of simmering water (double boiler method). Stir until smooth and silky. Remove from heat.

Step 6

Dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter exposed on top to create the signature 'buckeye' look.

Step 7

Gently shake off any excess chocolate and return the dipped buckeyes to the parchment-lined baking sheet.

Step 8

Remove the toothpicks from the buckeyes and use your fingers or the back of a spoon to smooth over the hole left by the toothpick.

Step 9

Chill the buckeyes in the refrigerator until the chocolate is fully set, about 30 minutes.

Step 10

Serve cold or at room temperature and enjoy!
