Ingredients

  • 1.5 cups Creamy peanut butter
  • 0.5 cups Unsalted butter
  • 1 teaspoon Vanilla extract
  • 3.5 cups Powdered sugar
  • 2 cups Semisweet or milk chocolate chips
  • 1 tablespoon Coconut oil or shortening (optional)

Directions

Step 1

In a large mixing bowl, combine creamy peanut butter, unsalted butter, and vanilla extract. Mix until well combined and smooth using an electric mixer or by hand.

Step 2

Gradually add the powdered sugar, about 1 cup at a time, mixing thoroughly after each addition. The mixture should be firm enough to hold its shape but not crumbly.

Step 3

Using a small cookie scoop or a tablespoon, scoop out portions of the peanut butter mixture. Roll the portions into smooth balls between your palms. Place the balls onto a parchment-lined baking sheet.

Step 4

Chill the peanut butter balls in the refrigerator for at least 30 minutes or in the freezer for 10–15 minutes to firm up.

Step 5

In a microwave-safe bowl, combine the chocolate chips and coconut oil or shortening (if using). Microwave in 20-second intervals, stirring well after each, until the chocolate is completely melted and smooth.

Step 6

Remove the chilled peanut butter balls from the refrigerator or freezer. Using a toothpick or skewer, dip each ball into the melted chocolate, leaving a small portion of the peanut butter visible at the top to resemble a 'buckeye.'

Step 7

Gently tap off any excess chocolate and place the dipped balls back onto the parchment-lined baking sheet. Smooth over the toothpick hole with your finger if desired.

Step 8

Allow the chocolate to set by chilling the buckeyes in the refrigerator for about 15–20 minutes.

Step 9

Serve chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 2 weeks or in the freezer for longer storage.
