  • 2 tablespoons Butter
  • 2 tablespoons (minced) Shallots
  • 2 cloves (minced) Garlic
  • 8 ounces (sliced) Cremini mushrooms
  • 1 cup (dry) Marsala wine
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 2 tablespoons (chopped) Fresh parsley

Directions

Step 1

Place chicken breasts between two sheets of plastic wrap and pound to an even thickness, about 1/2 inch thick.

Step 2

In a shallow dish, mix the flour, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.

Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove chicken and set aside on a plate.
