Ingredients

  • 500 g Cooked potatoes (mashed, roasted, or boiled)
  • 250 g Cooked cabbage (or other leafy vegetables like Brussels sprouts or kale)
  • 150 g Cooked carrots (or other root vegetables, diced)
  • 100 g Cooked parsnips (optional, diced)
  • 30 g Butter
  • 1 tbsp Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Chop all the leftover vegetables (potatoes, cabbage, carrots, parsnips, etc.) into small, even-sized pieces if they aren't already mashed or diced.

Step 2

In a large mixing bowl, combine the chopped vegetables and mash them slightly together, leaving some chunks for texture. Season with salt and black pepper to taste.

Step 3

Heat the butter and vegetable oil in a large, non-stick frying pan over medium heat.

Step 4

Once the butter has melted and starts to foam, add the vegetable mixture to the pan and press it down into an even layer using the back of a spatula.

Step 5

Cook the mixture for about 8-10 minutes, undisturbed, until the bottom forms a golden-brown, crispy crust.

Step 6

Using the spatula, carefully flip sections of the mixture over to brown the other side. If flipping the entire mixture at once is tricky, split it into smaller portions to make flipping easier.

Step 7

Cook for another 8-10 minutes on the other side until golden and crispy throughout.

Step 8

Once cooked, transfer the Bubble and Squeak to a serving platter and serve hot. This dish pairs perfectly with fried eggs, baked beans, or cold meats.
