Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil.
In a medium bowl, combine the ricotta cheese, eggs, grated Parmesan cheese, 1/2 teaspoon of salt, and 1/4 teaspoon of ground black pepper. Mix until smooth and set aside.
Heat the olive oil in a skillet over medium heat. Add the zucchini slices and a pinch of salt. Sauté for 3-4 minutes until slightly tender. Remove from heat.
If the matza sheets are stiff, briefly run them under cold water or dip them in a shallow dish filled with water to soften. Do not oversoak.
Spread 1 cup of marinara sauce evenly over the bottom of the prepared baking dish.
Place two softened matza sheets over the marinara sauce to create the first layer. You may need to break the sheets to fit the pan.
Spread one-third of the ricotta mixture over the matza layer. Top with a generous handful of baby spinach, a few slices of sautéed zucchini, and 1 cup of marinara sauce. Sprinkle with a handful of shredded mozzarella cheese.
Repeat the layering process two more times: matza, ricotta mixture, spinach, zucchini, marinara sauce, and shredded mozzarella.
For the final layer, top with matza sheets, spread the remaining marinara sauce over the top, and sprinkle with the remaining mozzarella cheese. Optionally, dust with garlic powder for added flavor.
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese on top is golden and bubbly.
Remove the lasagna from the oven and let it rest for 10 minutes. Garnish with fresh basil leaves before slicing and serving.
