Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
In a separate medium bowl, beat the eggs, vegetable oil, and vanilla extract until smooth.
Slowly add the wet ingredients to the dry ingredients, mixing gently with a spatula or wooden spoon until a soft dough forms.
If desired, fold in slivered almonds and/or chocolate chips for added texture and flavor.
Divide the dough in half and shape each portion into a long, slightly flattened log about 2 inches wide and 12 inches long. Place the logs on the prepared baking sheet, leaving some space between them.
Bake in the preheated oven for 25 minutes, or until the logs are lightly golden and firm to the touch.
Remove the logs from the oven and let them cool for about 10 minutes. Reduce the oven temperature to 300°F (150°C).
Using a serrated knife, carefully slice the logs diagonally into 1/2-inch-thick pieces. Lay the slices flat on the baking sheet.
Return the slices to the oven and bake for an additional 10 minutes on one side. Flip the slices over and bake for another 10 minutes, or until crisp and golden brown.
Remove the Mandelbroit from the oven and let them cool completely on a wire rack. They will firm up further as they cool.
Serve and enjoy with a hot cup of tea or coffee! Store in an airtight container for up to 2 weeks.
