Ingredients

  • 1.5 pounds ground lamb
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced (any color)
  • 4 cloves garlic cloves, minced
  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 cups beef or chicken stock
  • 3 tablespoons tomato paste
  • 1.5 tablespoons unsweetened cocoa powder
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 ounce dark chocolate (70% or higher), chopped
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)
  • 0.25 cup sour cream (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground lamb and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Transfer the lamb to a plate and set aside.

Step 3

In the same pot, add the diced onion and bell pepper. Sauté until softened, about 5 minutes.

Step 4

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 5

Return the browned lamb to the pot. Stir in the diced tomatoes, kidney beans, black beans, beef or chicken stock, and tomato paste.

Step 6

Add the unsweetened cocoa powder, ground cumin, chili powder, smoked paprika, cinnamon, salt, and ground black pepper. Stir everything to combine.

Step 7

Reduce the heat to low and let the chili simmer uncovered for 40-45 minutes, stirring occasionally. Add a bit more stock or water if the chili becomes too thick.

Step 8

In the last 5 minutes of cooking, stir in the chopped dark chocolate until melted and incorporated. Taste and adjust seasoning as needed.

Step 9

Serve the chili hot, topped with chopped fresh cilantro and a dollop of sour cream, if desired.
