Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 2 cups Buttermilk
  • 2 Large eggs
  • 4 tablespoons Unsalted butter, melted and slightly cooled
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Vegetable oil or additional butter for cooking

Directions

Step 1

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. Set aside.

Step 2

In a medium bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until fully blended.

Step 3

Pour the wet ingredients into the bowl with the dry ingredients and gently fold together using a spatula or wooden spoon. Mix until just combined, being careful not to overmix; some lumps are okay.

Step 4

Heat a large non-stick skillet or griddle over medium heat. Lightly coat the surface with vegetable oil or butter.

Step 5

Pour 1/4 cup of batter onto the hot skillet for each pancake. Use the back of the measuring cup to spread the batter slightly, if needed.

Step 6

Cook until bubbles form on the surface of the pancakes and the edges appear set, about 2 to 3 minutes.

Step 7

Carefully flip the pancakes and cook an additional 1 to 2 minutes, or until golden brown and cooked through.

Step 8

Repeat with the remaining batter, re-oiling the skillet as needed between batches.

Step 9

Serve the pancakes warm with your favorite toppings, such as maple syrup, fruit, whipped cream, or powdered sugar.
