Ingredients

  • 2 cups (sliced) Fresh strawberries
  • 3 tablespoons Granulated sugar
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 3 tablespoons Granulated sugar (for shortcake)
  • 0.5 teaspoon Salt
  • 0.5 cup (cold and cubed) Unsalted butter
  • 0.75 cup Milk
  • 1 teaspoon Vanilla extract
  • 4 scoops Vanilla ice cream
  • 1 cup (for topping) Whipped cream
  • 1 tablespoon Powdered sugar (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, combine the sliced strawberries and 3 tablespoons of sugar. Toss together and let the mixture sit for 15-20 minutes to macerate the strawberries and release their juices.

Step 3

In a large mixing bowl, whisk together the flour, baking powder, 3 tablespoons of sugar, and salt.

Step 4

Using a pastry cutter or your fingertips, cut the cold cubed butter into the flour mixture until the texture resembles coarse crumbs.

Step 5

Stir in the milk and vanilla extract until just combined, being careful not to overmix the dough.

Step 6

Drop the dough onto the prepared baking sheet in 4 equal portions, shaping each into a roughly round shortcake about 1 inch thick.

Step 7

Bake in the preheated oven for 12-15 minutes or until the shortcakes are golden brown and cooked through. Remove from the oven and let them cool slightly.

Step 8

To assemble, carefully slice each shortcake in half horizontally. Place the bottom half on a serving plate.

Step 9

Spoon some of the macerated strawberries and their juices onto the bottom half of the shortcake.

Step 10

Top with a scoop of vanilla ice cream, followed by a dollop of whipped cream.

Step 11

Place the top half of the shortcake on top, then garnish with more strawberries, whipped cream, and a light dusting of powdered sugar, if desired.

Step 12

Serve immediately and enjoy this decadent dessert!
