Ingredients

  • 1 pound Brussels sprouts
  • 4 ounces Pancetta, diced
  • 1 medium Yellow onion, thinly sliced
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Red pepper flakes (optional)
  • 1 tablespoon Fresh lemon juice

Directions

Step 1

Trim the ends of the Brussels sprouts and remove any outer leaves that are damaged. Cut each Brussels sprout in half.

Step 2

In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5 minutes. Transfer the pancetta to a paper towel-lined plate using a slotted spoon, leaving the rendered fat in the skillet.

Step 3

Add the remaining 1 tablespoon of olive oil to the skillet, then add the sliced onion. Sauté the onion over medium heat until softened and caramelized, about 8 minutes.

Step 4

Add the minced garlic to the skillet and cook for 1 minute, stirring frequently to avoid burning.

Step 5

Turn the heat up to medium-high and add the Brussels sprouts to the skillet, cut side down. Sprinkle with salt, black pepper, and red pepper flakes (if using). Cook for 6-7 minutes, allowing the Brussels sprouts to develop a golden-brown crust on their cut side.

Step 6

Once the Brussels sprouts are browned, stir them and continue cooking for another 5 minutes, stirring occasionally, until tender but still slightly crisp.

Step 7

Add the crispy pancetta back to the skillet and toss everything together. Cook for an additional 1-2 minutes to reheat the pancetta.

Step 8

Turn off the heat and drizzle the Brussels sprouts mixture with fresh lemon juice. Toss to combine.

Step 9

Serve warm as a delicious side dish for any meal.
