Ingredients

  • 150 grams Butter
  • 3 large Egg yolks
  • 1 tablespoon Fresh lemon juice

  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 tablespoon Optional: parsley or chives (for garnish)

Directions

Step 1

Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Rinse under cold water.

Cut any larger Brussels sprouts in half to ensure even cooking.

Bring a large pot of salted water to a boil. Add the Brussels sprouts and cook for 5-7 minutes, until tender but still slightly firm. Drain and set aside.
