Ingredients

  • 500 grams Brussels sprouts
  • 100 grams Bacon
  • 60 grams Walnuts
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Balsamic vinegar (optional)

Directions

Step 1

Trim the ends of the Brussels sprouts and remove any damaged outer leaves. Slice them in half lengthwise and set aside.

Step 2

Chop the bacon into small pieces (about 1 cm wide).

Step 3

Heat a large skillet over medium heat. Add the chopped bacon and cook for 5-7 minutes, stirring occasionally, until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate.

Step 4

In the same skillet with the bacon drippings, add the walnuts. Toast them for 2-3 minutes, stirring frequently, until fragrant and lightly browned. Remove and set aside.

Step 5

Add olive oil to the skillet and heat over medium-high heat. Add the halved Brussels sprouts to the skillet, flat side down. Let them cook undisturbed for 4-5 minutes until the cut sides develop a golden-brown sear.

Step 6

Stir the Brussels sprouts and continue cooking for another 5-7 minutes, stirring occasionally, until they are tender and slightly crispy.

Step 7

Finely mince the garlic cloves. Add the minced garlic to the skillet and cook for 1 minute, stirring constantly, until fragrant.

Step 8

Return the cooked bacon and toasted walnuts to the skillet. Season with salt and black pepper, stirring everything to combine. Taste and adjust seasoning if needed.

Step 9

If desired, drizzle balsamic vinegar over the mixture and toss to coat evenly.

Step 10

Transfer to a serving dish and serve warm as a side dish.
