  • 900 grams Brussels sprouts
  • 3 medium Shallots
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 250 milliliters Heavy cream
  • 100 grams Gruyère cheese, grated
  • 50 grams Parmesan cheese, grated
  • 75 grams Panko breadcrumbs
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and grease a medium-sized baking dish.

Step 2

Trim the ends of the Brussels sprouts and cut them in half. Blanch them in boiling salted water for 4 minutes, then drain and set aside.

Peel and thinly slice the shallots.
