Ingredients

  • 1 loaf baguette or rustic crusty bread

  • 1 cup canned cannellini beans, drained and rinsed
  • 1 cup grape or cherry tomatoes, halved
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon red wine vinegar
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons Parmesan cheese, grated (optional)

Directions

Step 1

Preheat your oven or broiler to 400°F (200°C).

Slice the baguette into 12-14 half-inch-thick slices. Brush both sides of each slice lightly with 2 tablespoons of olive oil.
