  • 4 pieces Chicken breasts
  • 1.5 cups Cherry tomatoes

  • 1 tablespoon Balsamic vinegar

  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 8 pieces Toothpicks or kitchen twine

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with cooking spray.

Step 2

In a medium bowl, combine the cherry tomatoes (halved), chopped fresh basil, minced garlic, balsamic vinegar, 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix well and set aside for flavors to meld.

Using a sharp knife, slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
