Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh mozzarella cheese
  • 1 cup grape tomatoes, diced
  • 2 tablespoons fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 package toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, combine the diced grape tomatoes, chopped basil, minced garlic, balsamic vinegar, and 1 tablespoon of olive oil. Mix well and set aside.

Step 3

Place the chicken breasts on a cutting board and carefully cut a pocket into the side of each breast without slicing all the way through.

Stuff each pocket with about 2–3 tablespoons of the tomato mixture and a generous portion of fresh mozzarella cheese.

Secure the stuffed chicken breasts with toothpicks to keep the filling in place.
