Ingredients

  • 4 pieces Chicken breasts
  • 1 cup Cherry tomatoes
  • 0.25 cup Fresh basil leaves
  • 1 cup Mozzarella cheese, shredded
  • 0.25 cup Parmesan cheese, grated
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 pieces Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking dish or oven-safe skillet and set aside.

Step 2

Prepare the bruschetta filling: In a medium mixing bowl, combine the diced cherry tomatoes, chopped basil, shredded mozzarella, grated Parmesan, minced garlic, olive oil, balsamic vinegar, Italian seasoning, 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Stir well to combine and set aside.

Step 3

Prepare the chicken: Using a sharp knife, carefully cut a pocket into the thickest side of each chicken breast. Be careful not to cut all the way through.

Step 4

Stuff the chicken breasts: Spoon the bruschetta filling into the pocket of each chicken breast, being careful not to overfill. Use toothpicks to secure the edges of the chicken breast to seal the filling inside.

Step 5

Season the chicken: Sprinkle the remaining 0.5 teaspoon salt and 0.25 teaspoon black pepper over the outside of the chicken breasts, ensuring even coverage on all sides.

Step 6

Sear the chicken: Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts to the skillet and sear for 2-3 minutes on each side, or until golden brown.

Step 7

Bake the chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 8

Remove the chicken from the oven and allow it to rest for 5 minutes. Carefully remove the toothpicks before serving.

Step 9

Serve the stuffed chicken breasts with your favorite side dish, such as a fresh green salad, roasted vegetables, or pasta.
