Directions

Step 1

Cut the pork shoulder into 2-inch chunks and season with salt and black pepper.

Step 2

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the pork and sear until browned on all sides, about 5-7 minutes. Remove the pork and set aside.
