  • 1 pound Breakfast sausage (ground)
  • 8 large Eggs
  • 1 cup Milk
  • 1.5 cups Red enchilada sauce
  • 8 medium Flour tortillas
  • 2 cups Cheddar cheese (shredded)
  • 1 cup Monterey Jack cheese (shredded)
  • 3 stalks Green onions (sliced)
  • 0.25 cup Cilantro (chopped, optional)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil or cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with olive oil or cooking spray.

Step 2

In a large skillet over medium heat, cook the breakfast sausage, breaking it apart with a wooden spoon, until browned and fully cooked through. Drain any excess grease and set aside.

In a medium-sized mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. Set aside.

Spread about 1/2 cup of the enchilada sauce evenly across the bottom of the prepared baking dish.
