Ingredients

  • 12 pieces large eggs
  • 1.5 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 pound breakfast sausage
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 medium yellow onion
  • 2 cups baby spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 4 cups day-old bread (cubed)
  • 2 tablespoons chopped parsley (optional for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or butter.

Step 2

In a large skillet over medium heat, warm the olive oil. Add the breakfast sausage and cook until browned, breaking it into small pieces with a spatula. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add the diced red bell pepper, green bell pepper, and yellow onion. Cook until softened, about 5 minutes. Add the baby spinach and cook until wilted, about 2 more minutes. Remove from heat.

Step 4

In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder.

Step 5

Layer the cubed bread evenly at the bottom of the greased baking dish.

Step 6

Spread the cooked sausage over the bread layer, followed by the sautéed vegetables. Sprinkle 1 cup of shredded cheddar cheese evenly over the vegetables.

Step 7

Pour the egg mixture evenly over the layers in the baking dish, ensuring all ingredients are covered. Gently press down on the mixture with a spatula to help the bread absorb the egg mixture.

Step 8

Top with the remaining 1 cup of shredded cheddar cheese.

Step 9

Bake in the preheated oven for 40–45 minutes, or until the top is golden and the egg mixture is set (a knife inserted in the center should come out clean).

Step 10

Let the casserole rest for 5–10 minutes before slicing and serving. Garnish with chopped parsley, if desired.
