Ingredients

  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 75 grams unsalted butter (cold, cubed)
  • 6 pieces bacon rashers (chopped)
  • 100 grams shredded cheddar cheese
  • 120 milliliters whole milk
  • 1 large egg (beaten)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a frying pan over medium heat, cook the chopped bacon rashers until crispy. Drain on paper towels and let cool.

Step 3

In a large mixing bowl, sift together the all-purpose flour, baking powder, and salt. Add black pepper for seasoning.

Step 4

Add the cold, cubed butter to the flour mixture and use your fingertips to rub it in until the mixture resembles coarse breadcrumbs.

Step 5

Fold in the crispy bacon and shredded cheddar cheese, ensuring an even distribution throughout the flour mixture.

Step 6

Make a well in the center of the mixture and pour in most of the milk and half of the beaten egg, reserving some egg for brushing the tops later. Gently mix with a fork until a soft dough forms, adding more milk if necessary.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it a few times. Roll the dough out to about 2.5 cm (1 inch) thick.

Step 8

Using a 6 cm (2.5 inch) round cutter, cut out scones and place them on the prepared baking sheet. Gather and reuse scraps, being careful not to overwork the dough.

Step 9

Brush the tops of the scones with the reserved beaten egg for a golden finish.

Step 10

Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and risen.

Step 11

Remove from the oven and allow to cool slightly on a wire rack. Serve warm with butter, or enjoy them on their own.
