Ingredients

  • 2 large ripe bananas
  • 1 cup creamy peanut butter
  • 0.333 cup unsweetened cocoa powder
  • 0.25 cup maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 0.5 cup dark chocolate chips
  • 0.125 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly with non-stick spray.

Step 2

In a medium mixing bowl, mash the ripe bananas until smooth and lump-free.

Step 3

Add the creamy peanut butter, maple syrup, and vanilla extract to the mashed bananas. Stir until fully combined.

Step 4

Mix in the unsweetened cocoa powder, baking powder, and salt. Stir gently until you have a thick, smooth batter.

Step 5

Fold in the dark chocolate chips, reserving a few to sprinkle on top of the muffins, if desired.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full. Sprinkle the reserved chocolate chips on top if using.

Step 7

Bake in the preheated oven for 16-18 minutes, or until the tops of the muffins are set and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Step 8

Remove the muffin tin from the oven and let the muffins cool in the tin for 5-10 minutes before transferring them to a wire rack to cool completely.

Step 9

Enjoy your surprisingly tasty brownie muffins warm or at room temperature. Store any leftovers in an airtight container at room temperature for 2-3 days, or refrigerate for longer freshness.
