Ingredients

  • 4 large Egg whites
  • 1 cup Light brown sugar
  • 0.5 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Pecans, chopped

Directions

Step 1

Preheat your oven to 250°F (120°C) and line two baking sheets with parchment paper.

Step 2

In a clean, dry mixing bowl, add the egg whites. Using an electric mixer on medium speed, beat the egg whites until soft peaks form.

Step 3

Gradually add the granulated sugar and brown sugar one tablespoon at a time while continuing to beat the mixture. Once all the sugar has been added, increase the mixer speed to high and beat until stiff, glossy peaks form. This should take about 5-7 minutes.

Step 4

Gently fold in the vanilla extract and salt using a spatula until evenly incorporated.

Using a leveled tablespoon or a piping bag fitted with a round tip, spoon or pipe the meringue mixture onto the prepared baking sheets, leaving about 1 inch of space between each dollop.

Sprinkle the chopped pecans over the top of each meringue.

Place the baking sheets in the oven and bake for 2 hours, or until the meringues are crisp and can easily lift off the parchment paper. Ensure you do not open the oven door while baking as this can cause the meringues to collapse.

Once baked, turn off the oven, leave the door slightly ajar, and allow the meringues to cool completely inside the oven for about 1 hour. This helps them dry out fully.

Carefully transfer the meringues to an airtight container for storage, or serve immediately as a light and sweet dessert or snack.
