Ingredients

  • 4 pieces medium apples (such as Honeycrisp or Fuji)
  • 4 tablespoons brown sugar, packed
  • 2 tablespoons rolled oats
  • 2 tablespoons unsalted butter
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.5 teaspoons vanilla extract
  • 1 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and dry the apples. Using a paring knife or apple corer, carefully remove the cores, leaving about 1/2 inch at the bottom of each apple to create a well for the filling.

Step 3

In a small bowl, mix together the brown sugar, rolled oats, cinnamon, nutmeg, and vanilla extract until well combined.

Step 4

Divide the brown sugar-oat mixture evenly among the cored apples, packing it into the center wells.

Step 5

Cut the butter into small pieces and place a piece on top of each filled apple.

Step 6

Arrange the apples in a baking dish and pour the water into the bottom of the dish to prevent the apples from drying out and to create a simple sauce.

Step 7

Drizzle the maple syrup over the tops of the apples.

Step 8

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 9

Remove the foil and bake for an additional 20-25 minutes, or until the apples are tender when pierced with a fork and the filling is bubbling.

Step 10

Let the baked apples cool for a few minutes before serving. Serve warm as is or with a scoop of vanilla ice cream or a dollop of whipped cream.
