Ingredients

  • 1 cup brown rice
  • 2 cups water

  • 2 tablespoons olive oil
  • 3 tablespoons orange juice (freshly squeezed)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon honey
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon ground black pepper
  • 0.25 cup slivered almonds (toasted)

Directions

Step 1

Rinse the brown rice under cold water to remove excess starch.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice and salt, then reduce the heat to low. Cover the saucepan and simmer for 35-40 minutes or until the rice is tender and the water is absorbed.
