Ingredients

  • 1 cup Brown rice
  • 2 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 3 cloves Garlic cloves
  • 1 cup Button mushrooms
  • 0.5 cup Fresh basil leaves
  • 0.25 cup Fresh parsley
  • 1 cup Gruyere cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Breadcrumbs

Directions

Step 1

Rinse the brown rice under cold water and cook it in 2 cups of vegetable broth according to the package instructions. Once cooked, set aside to cool slightly.

Step 2

Preheat oven to 375°F (190°C) and lightly grease a baking dish.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Finely chop the yellow onion and mince the garlic cloves, then sauté them in the skillet until softened and fragrant, about 3-4 minutes.

Slice the button mushrooms and add them to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms release their liquid and are tender.
