Ingredients

  • 2 cups (cooked) brown rice
  • 2 large egg
  • 1 medium (finely diced) carrot
  • 1 cup (frozen or fresh) peas
  • 1 medium (finely diced) red bell pepper
  • 2 stalks (thinly sliced) green onions
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 1 teaspoon (grated, fresh) ginger
  • 2 cloves (minced) garlic
  • 1 tablespoon (optional) toasted sesame seeds
  • 2 tablespoons neutral cooking oil (such as vegetable or canola oil)

Directions

Step 1

Prepare all ingredients: Cook the brown rice if not already prepared and let it cool to prevent clumping. Dice the carrot and red bell pepper, slice the green onions, grate the ginger, and mince the garlic.

Step 2

In a small bowl, beat the eggs and set aside.

Step 3

Heat 1 tablespoon of neutral cooking oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble them. Once cooked, remove the scrambled eggs and set aside.

Step 4

In the same skillet or wok, add the remaining 1 tablespoon of neutral cooking oil. Add the grated ginger and minced garlic, stirring for 30 seconds until fragrant.

Step 5

Stir in the diced carrots, peas, and red bell pepper. Cook for 3–4 minutes, stirring occasionally, until the vegetables are tender but still crisp.

Step 6

Increase the heat to medium-high and add the cooked brown rice to the skillet. Use a spatula to break up any clumps and stir well to combine with the vegetables.

Step 7

Drizzle the soy sauce and sesame oil over the rice mixture, stirring thoroughly to distribute the flavors evenly.

Step 8

Return the scrambled eggs to the skillet, breaking them up into smaller pieces and stirring them into the rice.

Step 9

Add the sliced green onions and toss everything together. Taste and adjust seasoning, adding an additional splash of soy sauce if needed.

Step 10

Transfer to a serving dish and garnish with toasted sesame seeds, if desired. Serve hot and enjoy your Brown Fried Rice Five Treasure!
