Ingredients

  • 3 cups Shredded cooked chicken (rotisserie or boiled and shredded)
  • 2 cups Red enchilada sauce (store-bought or homemade)
  • 12 pieces Corn tortillas
  • 2 cups Shredded Mexican blend cheese (cheddar, Monterey Jack, etc.)
  • 1 cup Sour cream
  • 1 cup Diced green chilies (canned)
  • 0.25 cup Chopped fresh cilantro
  • 0.25 cup Chopped green onions
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Ground cumin

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with cooking spray or a little vegetable oil.

Step 2

In a large bowl, combine the shredded chicken, 1 cup of the shredded Mexican blend cheese, diced green chilies, ground cumin, salt, and black pepper. Mix well to combine and set aside.

Step 3

Warm the corn tortillas: heat 2 tablespoons of vegetable oil in a skillet over medium heat. Lightly fry each tortilla for about 10 seconds on each side. This will make them pliable and easier to roll. Place the warmed tortillas in a clean kitchen towel to keep them warm.

Step 4

Spread 1 cup of the red enchilada sauce evenly over the bottom of the greased baking dish.

Step 5

Place 2-3 tablespoons of the chicken mixture into the center of each tortilla. Roll them up tightly and place them seam-side down in the baking dish. Repeat with all the tortillas.

Step 6

Pour the remaining 1 cup of red enchilada sauce over the rolled tortillas, spreading it out evenly to coat them all.

Step 7

Sprinkle the remaining 1 cup of shredded cheese evenly over the top of the enchiladas.

Step 8

Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the enchiladas from the oven and let them rest for 5 minutes before serving.

Step 10

Garnish with sour cream, chopped cilantro, and green onions. Serve hot and enjoy Brother Steve's Deluxe Enchiladas!
