Ingredients

  • 1.5 cups Warm water
  • 2.5 teaspoons Instant yeast
  • 1 cup Whole wheat flour
  • 2.5 cups Unbleached bread flour
  • 0.5 cup Cooked brown rice
  • 0.25 cup Rolled oats
  • 0.25 cup Cornmeal or polenta
  • 3 tablespoons Honey
  • 0.5 cup Buttermilk
  • 2 teaspoons Salt
  • 2 tablespoons Milk (for brushing)
  • 2 tablespoons Sesame seeds (optional, for topping)

Directions

Step 1

In a small bowl, dissolve the instant yeast in the warm water and allow it to sit for 5 minutes until foamy.

Step 2

In a large mixing bowl, combine the whole wheat flour, unbleached bread flour, cooked brown rice, rolled oats, and cornmeal.

Step 3

Add the honey, buttermilk, and the yeast mixture to the dry ingredients. Mix until a shaggy dough begins to form.

Step 4

Sprinkle the salt over the dough and knead it on a lightly floured surface for about 8-10 minutes, or until it becomes smooth and elastic.

Step 5

Place the dough in a lightly oiled bowl, turning it once to coat it in oil. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 60-90 minutes, or until doubled in size.

Step 6

Punch down the dough and shape it into a round loaf or place it into a greased 9x5-inch loaf pan.

Step 7

Cover loosely with the towel again and let it rise for another 45-60 minutes, or until it has risen about 1 inch above the pan or has doubled in size.

Step 8

Preheat your oven to 375°F (190°C) during the second rise.

Step 9

If desired, lightly brush the top of the loaf with milk and sprinkle with sesame seeds for added texture and flavor.

Step 10

Bake the loaf in the preheated oven for about 35-40 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom.

Step 11

Remove from the oven and let the bread cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.

Step 12

Slice and enjoy with butter, jam, or your favorite spread!
