Ingredients

  • 4 pieces ripe medium-sized tomatoes
  • 120 grams goat cheese
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic
  • 6 pieces fresh basil leaves
  • 1 teaspoon dried oregano
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons grated Parmesan cheese

Directions

Step 1

Preheat your oven’s broiler to high and position the oven rack about 15 cm (6 inches) below the heating element.

Step 2

Wash the tomatoes and slice each one in half horizontally. Use a teaspoon to gently scoop out the seeds and pulp to create a cavity in each half. Place the hollowed tomato halves cut-side up on a baking sheet lined with parchment paper.

Step 3

In a small bowl, combine the goat cheese, minced garlic, and dried oregano. Mix thoroughly to create a creamy mixture.

Step 4

Spoon about 1 tablespoon of the goat cheese mixture into the cavity of each tomato half, spreading it evenly.

Step 5

Drizzle the olive oil over the stuffed tomatoes, and sprinkle them with salt and black pepper.

Step 6

Scatter the grated Parmesan cheese evenly over the tops of the tomatoes for added flavor and crispiness.

Step 7

Place the baking sheet under the broiler and broil for 4-5 minutes, or until the goat cheese is bubbly and lightly golden on top.

Step 8

Remove the baking sheet from the oven and let the tomatoes cool for 2 minutes. Garnish each tomato half with a fresh basil leaf before serving.

Step 9

Serve warm as a side dish, appetizer, or as part of a larger meal.
