Servings: 4

Ingredients

  • 4 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 4 ounces smoked ham, thinly sliced
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons green onion, finely chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 soft sandwich buns
  • 2 tablespoons butter, softened

Directions

Step 1

Place the eggs in a medium saucepan and cover with water. Bring to a boil over medium-high heat. Once boiling, turn off the heat, cover, and let the eggs sit for 10 minutes.

Step 2

Drain the hot water from the saucepan and replace it with cold water to stop the cooking process. Once cool, peel the eggs and chop them into small pieces.

Step 3

In a medium mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, green onion, salt, and black pepper. Mix gently to create the egg salad.

Step 4

Preheat the broiler on high and line a baking sheet with parchment paper or foil.

Step 5

Slice the sandwich buns in half and spread the cut sides with softened butter. Place the buns, buttered side up, on the prepared baking sheet.

Step 6

Broil the buns for 1-2 minutes, or until toasted and golden brown. Watch closely to avoid burning.

Step 7

Remove the buns from the oven and layer each toasted bun with a slice of ham, a generous scoop of egg salad, and a sprinkle of shredded cheddar cheese.

Step 8

Return the assembled buns to the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent over-broiling.

Step 9

Serve immediately while warm and melty, and enjoy these savory, cheesy delights!
