Ingredients

  • 2 tablespoons Lemon juice
  • 0.25 cup Greek yogurt
  • 2 tablespoons Water

Directions

Step 1

Preheat your oven's broiler to high and line a baking sheet with foil or parchment paper.

Slice the eggplants into 1/2-inch thick rounds and arrange them on the prepared baking sheet in a single layer.

Step 3

Brush both sides of the eggplant slices with olive oil, and then sprinkle with 1 teaspoon of salt and 1 teaspoon of ground black pepper.
