Ingredients

  • 4 pieces catfish fillets
  • 4 tablespoons unsalted butter
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 ounces spaghetti
  • 4 quarts water
  • 1 tablespoon kosher salt (for pasta water)
  • 0.25 cup parmesan cheese (optional), grated

Directions

Step 1

Preheat your oven's broiler to high and position a rack about 6 inches from the heat source.

Step 2

In a small bowl, combine lime zest, lime juice, minced garlic, and fresh cilantro with the unsalted butter. Mash the mixture with a fork until fully combined. Set aside in the refrigerator until ready to use.

Step 3

Rinse the catfish fillets under cold water and pat them dry with paper towels. Brush each fillet with olive oil and sprinkle evenly with paprika, salt, and black pepper.

Step 4

Place the fillets on a foil-lined baking sheet for easier cleanup. Broil for 5-8 minutes, or until the fish flakes easily with a fork and is opaque throughout. Do not overcook.

Step 5

While the fish is broiling, bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of kosher salt, then add the spaghetti. Cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Step 6

In a large serving bowl, toss the cooked spaghetti with half of the lime cilantro butter to coat evenly.

Step 7

Divide the spaghetti among four plates. Place a broiled catfish fillet on top of each serving of spaghetti.

Step 8

Spoon the remaining lime cilantro butter over each fillet to enhance the flavor. Garnish with extra chopped cilantro if desired.

Step 9

Serve immediately with optional grated parmesan cheese on top.
