Ingredients

  • 500 grams Broccolini
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Lemon zest
  • 2 tablespoons Water

Directions

Step 1

Rinse the broccolini under cold running water and trim the ends of any tough stems.

Step 2

Peel and finely mince the garlic clove.

Step 3

Bring a large pot of water to a boil and add 2 tablespoons of salt. While waiting for the water to boil, prepare an ice bath by filling a large bowl with ice and water.

Step 4

Blanch the broccolini in the boiling water for 2 minutes until it turns bright green and just begins to soften. Use tongs to immediately transfer it to the ice bath to stop the cooking process. After 1-2 minutes in the ice bath, drain and pat the broccolini dry.

Step 5

In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, minced garlic, salt, black pepper, and lemon zest to create the vinaigrette.

Step 6

Heat a large skillet over medium-high heat. Add the 2 tablespoons of water to the pan and toss in the broccolini. Sauté for 1-2 minutes until the water evaporates and the broccolini is warmed through.

Step 7

Remove the skillet from the heat and drizzle the balsamic vinaigrette evenly over the broccolini. Toss gently to coat.

Step 8

Transfer the broccolini to a serving plate and serve warm or at room temperature.
