Ingredients

  • 500 grams Broccoli florets
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground turmeric
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 200 grams Plain Greek yogurt
  • 1 teaspoon Fresh ginger (grated)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh cilantro (chopped)
  • 0.25 teaspoon Red chili powder
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, toss the broccoli florets with olive oil, half the salt, turmeric, cumin, and coriander until the broccoli is evenly coated.

Step 3

Spread the seasoned broccoli in a single layer on the baking sheet and roast in the oven for 18-20 minutes, flipping halfway through, until tender and slightly browned.

Step 4

While the broccoli roasts, prepare the spiced yogurt sauce. In a medium bowl, whisk together the Greek yogurt, grated ginger, minced garlic, lemon juice, remaining salt, chopped cilantro, red chili powder, and black pepper.

Step 5

Once the broccoli is done roasting, transfer it to a serving plate.

Step 6

Drizzle the spiced yogurt sauce over the roasted broccoli or serve the sauce on the side for dipping.

Step 7

Garnish with extra chopped cilantro for a fresh touch, if desired, and serve warm.
