Ingredients

  • 1 head broccoli
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 clove garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water

Directions

Step 1

Cut the broccoli into bite-sized florets. Peel and slice the stems if desired.

Step 2

Bring a medium pot of water to a boil and add a pinch of salt.

Step 3

Add the broccoli florets to the boiling water and cook for 3–4 minutes or until bright green and tender-crisp. Do not overcook.

Drain the broccoli and immediately transfer it to a bowl of ice water to stop the cooking process. After 2 minutes, drain again and set aside.
