Ingredients

  • 500 grams Broccoli florets
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 3 tablespoons Pine nuts
  • 2 medium Garlic cloves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Water
  • 1 teaspoon Optional: Lemon juice

Directions

Step 1

1. Prepare the broccoli by cutting it into bite-sized florets. Rinse and drain well.

2. Thinly slice the yellow onion and mince the garlic cloves. Set aside.

3. Heat 1 1/2 tablespoons of olive oil in a large skillet over medium-low heat.

4. Add the sliced onions to the skillet and sprinkle a small pinch of salt to help them sweat. Cook, stirring occasionally, for about 10-12 minutes or until the onions are golden brown and caramelized.

5. While the onions are cooking, lightly toast the pine nuts in a dry skillet over medium heat, stirring frequently, for 2-3 minutes until golden and fragrant. Be careful not to burn them. Remove and set aside.

6. Once the onions are caramelized, push them to the side of the skillet and add the remaining 1/2 tablespoon of olive oil to the empty space. Add the minced garlic and cook for 30 seconds until fragrant.

8. Pour in 2 tablespoons of water, cover the skillet with a lid, and let the broccoli steam for 3-4 minutes until it is tender but still vibrant green.
