Ingredients

  • 16 ounces Cheese tortellini
  • 4 cups Broccoli florets
  • 0.5 medium Red onion
  • 2 cups Cherry tomatoes
  • 1 cup Cheddar cheese (cubed)
  • 0.5 cup Mayonnaise
  • 0.25 cup Greek yogurt
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Sunflower seeds
  • 0.5 cup Cooked and crumbled bacon (optional)

Directions

Step 1

Bring a large pot of salted water to a boil over medium-high heat. Add the cheese tortellini and cook according to the package instructions, typically around 7-9 minutes. Once cooked, drain and rinse with cold water to cool the tortellini quickly. Set aside.

Step 2

While the tortellini is cooking, steam the broccoli florets. Bring about an inch of water to a simmer in a pot, place the broccoli in a steamer basket over the pot, cover, and steam for about 4-5 minutes until the broccoli is bright green and slightly tender. Remove from heat and rinse with cold water to stop the cooking process.
