Ingredients

  • 500 grams broccoli
  • 2 tablespoons butter
  • 1 medium (chopped) yellow onion
  • 2 cloves (minced) garlic
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cup optional shredded cheese (cheddar or parmesan)

Directions

Step 1

Rinse the broccoli under cold water. Cut it into small florets, and set aside.

Step 2

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.

Step 3

Add the minced garlic and sauté for another minute, stirring constantly to prevent burning.

Step 4

Add the broccoli florets to the pot and pour in the vegetable broth. Bring the mixture to a boil, then lower the heat to a gentle simmer.

Step 5

Cook the broccoli for about 10–12 minutes, or until it is tender and easily pierced with a fork.

Step 6

Using an immersion blender, blend the soup directly in the pot until smooth. Alternatively, carefully transfer the soup in batches to a countertop blender to blend until creamy.

Step 7

Stir in the heavy cream, and season with salt and black pepper to taste. If desired, mix in shredded cheese for an extra layer of richness.

Step 8

Simmer the soup for another 2–3 minutes on low heat, stirring frequently.

Step 9

Remove the soup from heat and ladle it into bowls. Garnish with additional cheese, cracked black pepper, or a drizzle of olive oil if desired.

Step 10

Serve warm with crusty bread or a side salad.
