Ingredients

  • 12 ounces Penne pasta (or pasta of choice)
  • 3 cups Broccoli florets
  • 1 pound Large shrimp (peeled and deveined)
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 4 cloves Garlic (minced)
  • 0.5 teaspoons Red pepper flakes
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 0.5 cups Parmesan cheese (grated)
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. About 3 minutes before the pasta is done, add the broccoli florets to the boiling water. Drain pasta and broccoli together and set aside.

Step 2

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the shrimp with a pinch of salt and black pepper. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Stir in the minced garlic and red pepper flakes, cooking for 1-2 minutes until fragrant.

Reduce the heat to low, then stir in the lemon juice and the remaining 1 tablespoon of butter, allowing it to melt completely.

Add the drained pasta, broccoli, and cooked shrimp to the skillet. Toss everything together to coat evenly with the garlic butter sauce. Adjust seasoning with additional salt and pepper, if needed.

Step 6

Remove the skillet from heat and stir in the grated Parmesan cheese until well combined.

Transfer the pasta to serving dishes and garnish with fresh parsley. Serve immediately and enjoy!
